Frequently Asked Questions
What does bean-to-bar mean?
Bean-to-bar means that the chocolate maker buys raw cocoa beans directly from a farmer and processes them to make chocolate and transforms it into finished products such as bars.
What does the percentage mean? (e.g., 70% cocoa)
It refers to the ratio of cocoa to other ingredients. For example, A 70% cocoa bar is made up of 70% cocoa and 30% other ingredients.
What is single origin chocolate?
Single origin chocolate is made from cocoa beans that come from only one farmer.
What kind of cocoa beans do you use?
Our main concerns when choosing cocoa beans are flavor and socially and ecologically responsible farming. We choose our suppliers based on exceptional cocoa flavors and whether their production is stable enough to produce a constant supply and a fair revenue for them. Currently, we have a single supplier of Trinitario beans, however we are collaborating with several other farmers to help them reach a sustainable production level.
What are “tasting notes”?
Our focus in our cocoa bean to chocolate transformation is to keep the cocoa flavors intact. Tasting notes are flavors that the chocolate has kept from the cocoa beans through our transformation process. You can read the full cocoa profile of cocoa from San José del Real de la Carrera here.
What is craft chocolate?
As craft chocolate makers we focus on quality, fair handle, and real flavors. Craft chocolate is defined by the care instilled into each step of the chocolate-making process.
Why is your and other craft chocolate more expensive than the chocolate commonly found in a grocery store?
There are many factories influencing the pricing of our chocolate bars. We pay a higher price for our cocoa beans to make sure the farmer gets a fair wage, we also have to make sure people involved in the chocolate-making process gets a reasonable livable wage.
